VARIETY: Jonathan Apple
ORIGIN: This high-quality apple hails from the esteemed Resen region, known for its fertile soil and ideal climate.
HARVEST: Every apple is carefully allowed to reach perfect ripeness, guaranteeing that each fruit is harvested at its flavor peak. The apples are then crushed and melted, setting the stage for the fermentation process.
FERMENTATION & DISTILLATION: This fresh juice is then left to ferment at a cool 10°C for about a month, transforming it into an elegant cider or apple wine, as some love to call it. Sixfold distillation takes place right after the fermentation producing a pure, 70% alcohol distillate.
MATURATION: This powerful elixir is then introduced to 400-litre French oak barrels, allowing the spirit and wood to exchange their flavors for a period of 3 years. The final touch involves diluting the spirit to 43% alcohol, balancing strength with smoothness.
TASTING NOTES: The intense golden color of our Jonathan brandy is an excellent introduction to the wide variety of fruit and floral aromas waiting in the glass. Opulent on the palate, it progressively reveals its complex character. From the freshest Autumn apples to exotic spicy notes: vanilla leading to cinnamon and ginger.
FOOD PAIRING: It pairs with a selection of aged cheese, fruit tarte, and dark chocolate based desserts.
IDEAL SERVING TEMPERATURE: For a perfect experience serve from 6°C to 8°C.
